Apricot Fruitcake
3/4 cup flour
1/4 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
3/4 cup brown sugar
1-1/2 cup dried apricots, packed
2-1/4 cup dried dates (use pre-chopped)
2 cup walnut halves
2 eggs
1 egg white
1 tsp. vanilla extract

Preheat oven to 300 degrees. Spray 9"x5" loaf pan with aerosal cooking spray. Set aside.

Mix flour, baking soda, baking powder, salt, sugar, apricots, dates and walnuts. Set aside.

Beat eggs and egg white with vanilla until light. Pour in dry ingredients and mix well with a wooden spoon.

Scrape into pan. Bake for 30 to 40 minutes until toothpick comes out clean. Cool on wire rack.
